Awesome clean nacho recipe! Football season is around the corner!


Football season means foot ball parties and lots of party snacks. Which usually means very high calorie, high fat, highly processed foods. I cannot deny that they are indeed tasty lol but, I can tell you how much a curveball it will throw into your progress!

So, I present to you an amazing tasting and clean nacho recipe!

What you'll need:
✴️ can of pinto beans
✴️ can of black beans
✴️ can of mild ro tel 
✴️ part skim Monterey Jack cheese 
✴️ corn tortillas 

First step- turn those tortillas into tortilla chips! Extra work? Yes but cleaner and much cheaper than buying a bag of tortilla chips. So, you take the tortillas and slice them into fourths (using a pizza cutter is easiest). Put in a pan and cook in the oven under the broiler until crisp. Sprinkle with some sea salt if desired.

While those are crispy drain the pinto beans and cook them ib a sauce pan on medium heat. As they cook mash them up with a fork and add in a little but of shredded cheese. These will be your "refried beans" and they are fabulous! 

Once the beans are cooked and the chips are crisped. Spread each chip with the "refried beans". 

Then take all other ingredients (drain them) and mix together in a bowl. Then spoon the mix on top of each chip. Sprinkle a little shredded cheese on too and place back in the oven under the broil and broil until the cheese is melted. 



Enjoy!! 

Have a lot of mix left over? Turn it into spicy black bean burgers! 

We had plenty left over so, I added a spoonful of salsa and 1/2 cup oats. Blended then cooked up as bean burger patties! I liked them this way better than the last recipe I posted!
