Banana Oatmeal Muffins... Um Yum!

I know we hear a lot about how flour isn't good for us. Which is bad news for those of us who like to bake! Well, not anymore. I am new to this clean eating world so I may be late to the party (whats new right?!) but, I have discovered something that will change baking life as I know it. You know what that is? Oats. Old fashioned, steel cut, rolled whatever kind of oats. Awesome right?

I was led to this discovery trying to save our waistlines and our wallets from our Banana walnut bread from starbucks addiction. So, what you will need for this recipe.

Kitchen supplies:
Food processor or blender
Coffee grinder (preference)
Muffin Pan
Muffin Liners

Ingredients:
2 ripe Bananas
1 egg
1/2 cup applesauce
1 cup of vanilla (or plain) greek yogurt
2.5 cups of oats
1/2- 3/4 cup of honey (preference)
2 tsp baking powder
1.5 tsp baking soda
2 TBSP Chia seeds (or ground flax seeds)
1.5 tsp Vanilla Extract
1/2 cup chopped walnuts

Take the 2.5 cups of oats and add to food processor (or coffee grinder) and grind until flour like consistency. We only have a little food processor so I found our coffee grinder to do a better job with this. Once powder consistency add all ingredients (except walnuts) to food processor (or blender if you don't have one) and blend until all mixed together. Then stir (not mix) in walnuts. A fun substitute for the little ones, instead of using walnuts use chocolate chips. Fill muffin lined muffin pan 3/4 full.
Bake at 375 for 15 minutes.

Viola! Tasty healthy banana walnut muffins. Can't beat that ;)
